Dutch Baby Pancake

I have never heard of a Dutch Baby Pancake before, but as soon as I came across it in the blogsphere a couple of days ago, I was anxious to try.

After dinner tonight, I finally did.

Dutch baby is a sweet German pancake, made of butter, flour, sugar, and milk. The pancake is puffy around the outside and flat in the center offering a perfect nest for sliced fresh fruit.

However, it is just as delicious with a little bit of powdered sugar and/or fruit preserves.

Cast iron skillets are recommended to make the pancake. I didn't have one nor have I any ovenproof pans, so I used my trusty Wilton 8" round cake pan.

It came out pretty good! I like the crust more because it is....well, crusty! The center is more dough-y and egg-y, but not heavy by any means. I like mine with fruit preserves, but hubs is fine with just a dusting of powdered sugar. Room for improvement - less butter next time.

This is an excellent dish to try for a special weekend breakfast!

Dutch Baby Pancake:

- 1/2 cup milk
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 large eggs, at room temperature
- 3 tbsp unsalted butter

1. Preheat oven to 425 degrees.
2. Whisk together milk, flour, sugar, and eggs until smooth and creamy.
3. Melt butter in a 10-inch ovenproof skillet (cast iron is ideal) over medium heat. Coat the skillet well.
4. Pour egg mixture into the skillet and let it cook, without stirring for 1 minute.
5. Place skillet in oven and bake until pancake is puffed and golden – 12 to 15 minutes.
6. To serve, cut into serving-size wedges and transfer to individual serving plates. Top with your favorite topping and serve immediately (the pancake deflates very quickly).

Topping ideas: Fresh applesauce with a dash of cinnamon, crushed pineapple, whipped cream and sliced fresh strawberries, syrups (maple, your favorite fruit syrup, or honey), and canned pie filling.


  1. This recipe is so simple that it's a must try, especially for those that like desserts. It's so lite, fluffy, and creamy all at the same time. Plus, it tastes really really good. After I burn off all the butter from it by the end of the week, I hope to have more!

  5. that's funny because I hadn't heard of this either until about 2 months ago on a photoshoot. but once I tasted it, I fell in love. the one I tasted had some peaches on top, cooked in sugar I think.
