Banana Nut Muffins

The hubs came home from Vegas with a badly beaten-up banana in his bag. He said to feed it to Pargo, but I turned it into five banana nut muffins instead.

The last time we had banana bread/muffin was in Maui. The last time I made them was probably in 8th grade in my Teen Living class. I had fun making these today! Because I only had one banana, I cut the recipe in third. I was proud of my knowledge in dividing fractions.

The muffins turned out perfect! We ate them all right out of the oven (after the photo shoot of course). They warmed our tummies. I thought they were a bit too sweet so I will use less sugar next time.

I doubt anyone will make five muffins so instead of giving you the measurements I used, here is the full recipe from Simply Recipes. The only ingredient I took out was the espresso.

Banana Nut Muffin:

3 or 4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 tsp vanilla
1 tbsp espresso or strong coffee (optional)
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
1 cup chopped walnuts (toasted or raw)

No need for a mixer with this recipe.

1 Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
2 Mix in the sugar, egg, and vanilla.
3 Sprinkle the baking soda and salt over the mixture and mix in.
4 Add the flour, mix until it is just incorporated. Fold in the chopped walnuts.
5 Pour mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack.

Makes 12 muffins.

  2. Yum! One second she was rummaging through my bag and pulled out a brown banana, and the next, hot muffins were coming out of the oven. So friggin good! I don't normally care for banana flavored anything, but these rocked.
